While breakfast foods rate really high for me, and dinner savory's are some of my faves, lunchtime has always been my big meal. Breakfast is usually small and quick, dinner is usually wind down time....but lunchtime? That is all me. I love taking that hour (or longer) and enjoying my lunch. I really love sharing it with friends...but have no problem being on my own, especially if I have a book. Fill it with veggies and some protein and you have one happy Liz.
So, on that note...here's my lunch today. I heart eggplant in a major way, and when you combine it with fresh mozz, tomatoes and basil...I am in heaven! Eggplant Napoleons anyone?

Wow this looks so good! I haven't had eggplant in a couple of months. I think I need to change that with this recipe!
ReplyDeleteIt had been awhile for me too...and It was sooo good! WF has one, but theirs has gluten, so this is my GF version! I coat the eggplant in a mix of bob's gf ap flour & cornmeal and pan fry. Then top one slice with marinara (or just crushed tom) and the other slice with pesto; top with mozz (or you could just use nooch) some sliced tom and basil! HEAVEN! :)
