So sorry I have been totally MIA!!!
So much has happened in the last few weeks....
Gabby started high school...which she loves!!!
Which of course we had to celebrate with a trip to our favorite ice cream shop....the Dreamette!!!
I started my new job (which I LOVE!) and soccer season has kicked into full gear (which is VERY time consuming!)!!! Gabby is practicing 3 nights a week, with games on weekends, and this weekend we are participating in a tournament. Our team always does the First Coast Labor Day Shootout here in Jax, and the girls love it....plus it is a nice (close) start to the official season!!
The girls had two games today...with only a 2 hour break between...so we all ran to the Loop for a quick lunch to stay close to the fields. We have two more tomorrow (all have been on the other side of town) so wish us luck!!! Monday I finally get to relax and enjoy my holiday weekend. hahaha
So....I hope everyone has a nice enjoyable Labor Day weekend doing what they enjoy (we obviously love hanging out at soccer fields)!!!

Breakfast of Champions
My fast, easy, high protein breakfast staple....
I know it's not much...but it totally fills me up!!! It's a Body by Vi Nutritional shake (my sister sells them) mixed with Almond Milk, Banana, peanut butter, and Heshey's Syrup. Soooo good. I also vary it up by mixing the protein powder with OJ, or instant coffee for the cappachino feel. MMMMM.
So here's the recipe:
Liz's Breakfast of Champions
Mix in blender:
1 c Silk Almond Milk (unsweetened) (or whatever milk you prefer...even water!)
1 whole Banana
1 spoonful Peanut Butter (or whatever you prefer)
1 squirt (roughly Tbsp) Hershey's Syrup
2 rounded scoops Vi-Shape Nutritional Shake Mix
Blend and enjoy! :)

Lunch time is yum time :)
I know it doesn't look like much, but let me assure you....this is soooo good.
I had some grilled chicken left over from a cookout the other night, cherry tomatoes from the farmer's market, basil from the garden and fresh mozzarella balls in the fridge, so I tossed them all together in a pan to heat then poured in a bowl....so light and satisfying! One tip though....definitely wait till the last seconds before you add the mozz or you will have a mess! :)

Omg...am I really doing it?
So, I am officially jumping off the diving board and into the pool!!!
This weekend there is a fundraiser to support Luke Akerstrom, a very sweet, very sick little boy here in Jax. And at the fundraiser, they will be doing a bake sale and I am sending in my version of Roe Cookies (named after another very sweet little boy) because I wanted anyone with food allergies to be able to have something sweet to eat (they are GF and Big 8 free).
And because I wanted moms to feel safe, I wanted to include an ingredient label, and because I was putting on an ingredient label, felt that maybe I should put a product label on too. So voila...the birth of Pretty Petunia!!! (this is all due to merciless bullying from several good friends...love you guys!!) Thanks to Bebe Alexander especially, for allowing me to use the Roe Cookie recipe, letting me make it even more allergy friendly, and to use it as my guinea pig this weekend. The taste tests this week have been an astounding hit....no one could tell they were GF, Vegan, or Big 8 friendly! And I'm so happy the boy himself will feel safe eating at least one thing at the bbq!! :)
I hope everyone enjoys the recipes I will be creating from here on out and trying out on you!!
