Got 10 minutes?

Today was one of those days....the ride home ended with a cracked windshield. Not my kind of day. After all that I needed a comfort meal....and luckily, my favorite one only takes 10 minutes!!

This is so simple...some GF pasta, a tomato, some garlic, fresh basil and a chicken breast. And if you want...toss some mozz in there. :)

Dice the chicken and tomato and mince your garlic (I think the easiest way is to use your Microplaner). I julienned my basil, but you can chop it however you prefer.

While you cook the pasta (which takes 10 minutes!), saute the chicken . Towards the end of cooking time, toss in the tomato and garlic and cook a couple minutes longer. Last minute, toss in the basil (literally last minute...otherwise it will turn black...but will still taste fine!). Drain the pasta and toss with chicken mixture. Pour into bowl and feast.

Voila...dinner is served. And now...on to Grey's Anatomy :)

I'm still here!!!

Sorry I have been gone for so long!!! I can't believe a month went by that quickly!

Things have been pretty hectic around here...my job is about 25 miles away, so I leave the house EARLY and get home LATE these days. And...(so exciting!) Gabby made the varsity soccer team at her school! As a freshman!!!! It definitely makes our schedule more hectic, but I am such a proud momma!! I'll post some pics after her game next Monday :)

And, I am totally ashamed to admit this...but things have been so crazy that I just have not been cooking much. And let me tell you...it is very possible to get sick of take-out! People look at me crazy when I say that I cook every night, but I'm serious....I just love to do it! I feel better, I know I eat healthier, and I know my daughter is eating healthy, organic, processed junk food free....which makes me VERY happy.

I'm planning on cooking up a storm this weekend....so stay tuned. New stuff coming next week!

Only in Jekyll...

Gabby occasionally has to play soccer games in Jekyll Island...which is this tiny little island off the coast of southern Georgia. It can be a pain because it takes about an hour and a half to get there, and her games always seem to be in the early morning...but when it comes down to it, we absolutely love it there...and, I have no problem turning one soccer game on Saturday morning into an entire weekend...lol.

This weekend was a bit different, Gabby's dad's birthday was on Friday so we couldn't leave early (and technically I was supposed to be in NYC, so wasn't planning on being here for the game), so we got up early Saturday morning, loaded up the car with coolers and dogs (who got to go to daycare for the day) and headed to JI for a 9:30 game.

And because God loves me, and my trip to NYC had to be postponed....he made sure I had something to look forward to when I got there....this weekend just happened to be the 6th annual Shrimp & Grits festival. Praise Jesus. And let me tell you....it was awesome. And it totally made up for a miserable, freezing cold soccer game! I convinced some of the other parents to head over to the festival with us for lunch and we had sooo much fun!

And as you can tell...the girls had no problem getting into the action either. hahaha.

It was really fun to show everyone all of our favorite little shops, and to shop at all the booths set up for the festival.

But I can tell you right now...the highlight of my day was going to The Commisary. It is the best little shop on JI and has all the best sauces, salsas, dressings, etc. that are made just for them. We got their awesome Peach salsa, but this one is my favorite...and I will go to JI just to get it!!!! :)

I love it so much I bought two. :)

Love

Yes, it may seem silly to LOVE seasoning....but I seriously LOVE this stuff....it's my favorite. I mean,  seriously....it's called Soul Seasoning! How can you not love that??

The problem?? You can only buy it at Winn Dixie...and they have been back-ordered for months....so yeah, I bought all they had the moment I saw it. Gabby looked at me like I had lost my mind...I didn't care.

And I'm even sending a bottle to a friend who has no Winn Dixie :)

MIA

So sorry I have been totally MIA!!!

So much has happened in the last few weeks....

Gabby started high school...which she loves!!!

Which of course we had to celebrate with a trip to our favorite ice cream shop....the Dreamette!!!

I started my new job (which I LOVE!) and soccer season has kicked into full gear (which is VERY time consuming!)!!!  Gabby is practicing 3 nights a week, with games on weekends, and this weekend we are participating in a tournament. Our team always does the First Coast Labor Day Shootout here in Jax, and the girls love it....plus it is a nice (close) start to the official season!!

The girls had two games today...with only a 2 hour break between...so we all ran to the Loop for a quick lunch to stay close to the fields. We have two more tomorrow (all have been on the other side of town) so wish us luck!!! Monday I finally get to relax and enjoy my holiday weekend. hahaha

So....I hope everyone has a nice enjoyable Labor Day weekend doing what they enjoy (we obviously love hanging out at soccer fields)!!!
